Chocolate Chip Cookies

Well it's remarkably simple. Let's see if I can remember it off the top of my head.

Cream together 1 cup of butter and 3/4 cup of brown sugar, 3/4 cup of white sugar. Add 2 eggs (I think that's right!). And a little vanilla if you're so inclined. Melt two oz of unsweetened chocolate (if you can't get this, just substitute in 2 Tbsp. of unsweetened cocoa (if you can't get that also... that's an entirely different problem,) if you use the cocoa you might want to add a little bit of espresso or really strong coffee to tarten it up a bit). Dribble the chocolate into the batter, or just add the cocoa. Add the chocolate slowly since you don't want to cook anything already in there.

Add 2 cups of flour, 1 teaspoon of baking soda (I'm not quite sure about this one either, quantity wise, but I think that's right). Actually add half the flour, then add 12-16 oz of semisweet chocolate chips (or do half semisweet and half white, I haven't tried it but it sounds good), 1 cup of chopped walnuts (not too finely chopped, make it chunky). Then add the rest of the flour, it's really stiff by now and actually I think a little less than 2 cups would be right, but don't do too much less or they'll spread.

Put in big blobs on the cookie sheet and bake at 350 F (I don't know the conversion) [175 C] until they're done. They'll look solid, they should never brown since they're so dark to begin with. Yummy.
